Courgette and Brie Soup

  • 2 large leeks, washed and sliced
  • 50g butter
  • 750g (about 3 -4) courgettes, sliced
  • 2 medium sized potatoes, peeled and cubed

  • 1 litre chicken or vegetable stock
  • 80g Brie


  • Saut√© the sliced leeks in the butter until soft.

  • Add the courgettes, potatoes and stock and simmer for approximately 20 minutes or until the vegetables are soft.

  • Add the brie and simmer for a further couple of minutes just to soften the cheese.

  • Remove from the heat and pure√© the mixture until smooth.

  • Heat through, check for seasoning and serve.
